2016 Melon de Bourgogne

Our first bottling of Melon De Bourgogne is made from grapes grown exclusively in the vineyards that surround our winery, next to Lake Ontario. This cool site allows a long and slow ripening, which helps to accumulate great flavours and retain acidity in the berries. Following harvesting the grapes were gently whole bunch pressed and then cold fermented with cultured yeast. The wine rested on its fermentation lees undisturbed for 4 months, and was then filtered and bottled in the spring.

The 2016 Melon de Bourgogne shows delicate aromas of grapefruit, orange blossom and flint on the nose. On the palate there is more grapefruit present, as well as green apple and pear. The wine is bone dry with crisp acidity, and is very refreshing and vibrant. Serve well chilled with seafood or as an aperitif, or on its own on a hot summers evening.
